Mollie is a “flexitarian” eater herself, preferring mostly
vegetables, whole grains, nuts, eggs, cheese, and fruit,
but she also eats quality meats and fish from time to
time. She ate a largely vegan diet for almost 18 years,
and understands the need for varied approaches to healthy
eating. Her experience as a mother has been instructive –
her son loves a good cut of meat but also adores
vegetables, and her daughter is a devout vegetarian. As an
advisor to college students of all eating persuasions, and
as cooking teacher to preschoolers – as well as a diet
advisor to people ranging in age all the way to 93, Mollie
has seen it all! She is an enthusiastic coach and her

lifestyle.
